Bomberger's Declaration (2023 Release)

Bottle 806 of 2650. Batch#23E1951 Smell: Toasted wood. Smells like it has been finished or came from a special type of Barrel. The craftsmanship of the barrel drying process really shines through and I appreciate it. Palate: Roasted, toasted goodness! Lots of nice oakiness going a tad bitter at the end, but then pulls back and returns to a nice roasty finish. Finish: The kind of finish you can just sit with and enjoy. It hangs around for awhile and lets you bask in the roastiness with occasional cinnamon pops. This is a really amazing Bourbon!

Bomberger's Declaration 2023 Glass: Glencairn, rested 15 minutes. Color: Dark reddish amber. Nose: Cherry cola, oak, and raisins. A subtle hint of maple syrup. Palate: More cherry cola, cinnamon, and baking spice. Finish: Long with some oak tannins. Medium heat. Splash: No new flavors emerge. Overall: 9/10 - Smooth and pleasant, with an excellent finish. It reminds me of Stagg, which is high praise.

First pour Nose: seasoned oak, savory, musty, licorice, fruit note Palate: more seasoned oak, chocolate, savory note with a touch of spice as you swallow Finish: oak, bitter dark chocolate, espresso 8 on the t8ke scale.

The extensive oak aging of Bombergers 2023 contributed pleasant notes of plum, cherry, vanilla, brown sugar, cookie dough, caramel, treacle, peanut, and butterscotch.

Not exactly vanilla and caramel on the palate, more like burnt butter. A little spice and warmth on the finish, but a solid pour.

Notes pending, but in summary... buttery, very pleasant caramel, warming with a somewhat long finish and spice that coats the palate.
