Bib & Tucker 12 Year Single Barrel Select Bourbon (Barrel Proof)

This 12-year-old Tennessee sour mash bourbon, created by August Sebastiani for 3 Badge Beverages, features a mash bill of corn, rye, and malted barley, aged for 12 years in a charred American white oak barrel. It begins with aromas of maple pralines, firewood, apple cider, milk chocolate, pear, and oak, leading to a long, warming finish with notes of spicy rye, roasted corn, chestnut, smoke, and burnt caramel.

Has a very pleasing aroma. Corn, vanilla, a hint of floral. Sweet. The taste is fresh and clean. It's boozy but not excessively strong. Corn, caramel, oak, very mild pepper spice. The finish is quite quick and clean. I truly enjoyed this one. Best served neat at room temperature. Adding a cube was okay, but it did mute the flavors somewhat.

The aroma is clean bourbon corn and vanilla. The taste is clean bourbon corn. What's great is the absence of any unpleasant aftertastes. Hints of the charred barrel can be detected as an aftertaste.

Nose: Vanilla, with floral undertones. Palate: Vanilla and caramel disappear quickly, replaced by cherry. Finish: Lingering dry oak transforms into pepper.

Dark and oaky, like resting in an abandoned barrel. Strong spice from aged, damp oak. A brief taste of peanut complements the cinnamon red hot finish.

Initially floral with hints of pear, it then shifts to vanilla and concludes with a potent pepper flavor and a smooth finish.
