About this bottle

Bayou Rum was conceived by Louisiana Spirits founders Tim and Trey Litel and Skip Cortese, who aimed to revive the tradition of local rum production. The rum is made using a combination of Louisiana sugarcane molasses and raw sugar from M.A. Patout and Son, Ltd. The white rum is a pot-still distillate mixed with triple-filtered spring water and is bottled without aging.

Morton Welsh 4.0

The aroma is like a petit four with a subtle hint of berry. Imagine if petit fours were next to raspberry tarts in a bakery display. The flavor follows suit with almond, buttercream, and vanilla. The finish is heavy in the throat and moves to your lips the longer you sip. It's not bad, but it can be distracting. It makes an absolutely fantastic daiquiri; all the flavors worked together so well they reached the playoffs.

Royal Sheppard 4.0

Scores well compared to other unaged white rums, with upfront sweetness but no harshness, and a long finish. As an unaged pot-still rum, it can be used in some cocktails without needing overproof Wray and Nephew. Another fine American pot-still rum in this age range is Prichard's, available at Total Wine in Maryland. I bought Bayou at a Virginia ABC store in the DC metro area. Both are excellent for their category.

This is truly a great all-around rum and a good bar stock for keeping on hand. I don't detect many fruity notes from this, but instead I get a hint of sweetness and a strong presence of plain yogurt or puff pastry cream with a little minerality and herbal tea. A really pleasant rum in any cocktail and could almost be sipped if it had a slightly more robust flavor, but that is expecting a lot from a silver rum. It's also pretty smooth.

This rum is quite enjoyable. It presents a strong molasses character, which is appealing. Perfect for making daiquiris.

This isn't your typical white rum; you could drink it on ice or mix it with cola.
