Barrell Bourbon Cask Finish Series: PX Sherry

Aroma - This scent seems quite dense for its proof. My immediate impression is a strong jam-like quality. Darker fruits like plums and figs are more prominent than red fruits such as strawberries and cherry pie. A solid foundation of brown sugar and caramel supports everything. As it airs out, subtle baking spices emerge. Taste - Caramel, dark fruits, vanilla, with just a very faint trace of baking spices. The finish is lengthy, abundant with dark fruits and caramel. It then shifts slightly to a drying sensation, preventing excessive sweetness on the palate. The alcohol presence is also noticeable. Overall - The finish is pleasing. Many minutes after a sip, the waves of dark fruit combined with caramel persist. The thickness is appropriate for the proof level.
