From a virtual tasting session, which provided complimentary 2 oz pours for NCWH. Smelling it, you get cereal grain, brown sugar, corn dust, cinnamon, allspice, a good amount of rye, and ethanol. Drinking it, there's light brown sugar, sweet corn, toasted marshmallow, and peanut brittle. The aftertaste is medium-long with sweet oak, noticeable ethanol, pleasant rye spice, and sugars. It avoids being overly tannic or dry considering its proof and minimal age.

Nose: Initially, a strong mineral note like Dickel 12, then after a few minutes it becomes quite sweet and fruity with orange and cherry, also rose hips and musty corn. Palate: Sweet and slightly buttery with sharp fruitiness, mineral bitterness, and heat. Finish: Long with mineral and fruity notes.
Nose: honey, hay, apple, brown sugar, caramel, cinnamon, oak, vanilla, quite potent, reminiscent of spiced apple pie baked in a rustic setting. Taste: Flavors from the nose carry through, with notes of mixed nuts, pastry, abundant sugar balanced by wood and leather. Finish: Long, warm, and spicy, yet mellowed by fruit and a subtle hint of salt.
The first product from this distillery I've had. A friend provided the chance to sample it. Quite impressive. The aroma is excellent. You can detect the mix of older and younger casks in this blend. Some sweet vanilla, cherry, and leather on the finish.
This is a great spirit, considerably above average. I won't be purchasing another bottle, as there are too many other expressions to explore, but I will thoroughly enjoy the one I currently possess. Batch 7 at 124.7 proof
