Balblair 1999 3rd Release

Nose: Notes of Christmas cake, dried fruit and peel, vanilla, and citrus (grapefruit and blood orange). A spicy quality is present with ample aromatic wood, both seasoned staves and fresh timber. Faint sandalwood and a trace of grassy mint. It evokes a bourbon aroma. Palate: A solid, well-formed initial taste that develops significant spice and bittersweet citrus. Vanilla and bold oak notes mingle with dark chocolate and black coffee. It's not a gentle palate, leaning towards astringency, but it softens at the very end. It's demanding yet rewarding; one might poetically label it "resolute" – possessing grip and authority, but without any ethanol sting. Finish: Extended. Sweet, oaky, gingery spice, vanilla, citrus – a persistent finish leaving a full and intricate aftertaste. A deeply satisfying dram – akin to those robust, old-school east coast highland malts that require you to accept them on their own terms. Novices to single malts might find it somewhat intimidating due to its strong cask influence. The maturation involved a mix of bourbon barrels and Spanish oak sherry butts, the presence of both being easily discernible. It's not excessively oaked, nor is it a mild and approachable malt. The second edition from 1999, however, was more accessible and immediately impressive. Adding water initially diminishes the nose – allow it to rest and evolve for at least 15 minutes (wait for the mist to appear – it starts almost immediately, but with time, a tiny bit of water creates a lovely cloudiness). You will discover an entirely new spectrum of experiences. On the nose, honey and nougat emerge, broadening to an almost floral character (hints of honeysuckle, roses, and violets). The palate is similarly softened but not diminished – water releases more spices but also dilutes them while taming the oakiness. It actually enhances the overall balance. I endorse adding a splash of water to this whisky as it renders it quite delightful and more inviting, though it does lessen the intensity. You might perceive a slight bitterness right at the conclusion after dilution, but persist – it will vanish or you will grow accustomed to it. It's not metallic, more like very bitter dark chocolate and over-steeped black tea. "Very Good": 85/100 (4 stars)

This is excellent! On the nose, I detect notes of dried cherries, chocolate malt, sherry, and damp leather. The taste is delicious, with flavors of bitter dark chocolate, cream, Luxardo cherries, and baking spices. The finish lingers, eventually becoming slightly drying. It's quite interesting and improves as the bottle level drops. Initially, my pours needed 20-30 minutes of air, but that's no longer the case. Excited to discover more Balblairs.
