Ingredients

2 oz Blanco tequila
1/2 oz Orange juice
1/3 oz Lemon juice
2/3 oz Egg white (pasteurised)
3 1/2 oz Ginger ale

How to make

Serve in a highball (max 10oz/300ml)

Prepare

  1. 1 Select and pre-chill a HIGHBALL (MAX 10OZ/300ML) GLASS.
  2. 2 Prepare garnish of Lemon zest twist and quarter orange slice wheel.

Method

  1. 3 SHAKE first 4 ingredients with ice and strain back into shaker.
  2. 4 DRY SHAKE (without ice) to emulsify.
  3. 5 SLOWLY POUR two-thirds of the shaker's contents from a higher-than-normal height into a chilled empty glass (no ice in the glass) while simultaneously pouring ginger beer with your other hand. (The cocktail and ginger ale should form a single stream of liquid falling into the glass.)
  4. 6 As when pouring a Guinness, to achieve a perfect head, LEAVE TO SETTLE for at least a minute. Ideally, during this settling period, the glass should be placed in a freezer/glass-froster/fridge.
  5. 7 POUR the final contents of the shaker into the glass. As you do so, the head should rise like a souffle.

Garnish

  1. 8 EXPRESS lemon zest twist over the cocktail and discard.
  2. 9 Garnish with quarter orange slice on rim.

A double shot of tequila features in this wonderfully light cocktail.

The earliest known recipe for the Young Man's Delight is in the second edition of G. F. Steele's 1934 book, My New Cocktail Book. The recipe, listed as YOUNG MAN'S DELIGHT (Texas or Mexico), includes: 1/2 pint Tequila, 1 Orange, 1 Lemon, white of an Egg, and Ginger Ale or Mineral Water.
