3/4 oz Light white rum
3/4 oz Red quinquina e.g. Dubonnet, Byrrh

Serve in a coupe glass

  2. 2 Prepare garnish of orange zest twist.

  1. 3 STIR all ingredients with ice.
  2. 4 STRAIN into ice-filled glass.

  1. 5 EXPRESS orange zest twist over the cocktail and use as garnish.

History

A trio of spirits tamed by a splash of aromatised wine. Serving temperature is key, so chill the glass and ideally the ingredients. An orange zest twist is an addition to the classic build.

This recipe is adapted from Harry Craddock's 1930 publication, The Savoy Cocktail Book. The original recipe specifies Hercules, a product no longer available. Vintage newspaper advertisements describe Hercules as a "Maté-Wine Apéritif" with an "alcohol strength over 25°." A different wine-based aperitif has been used in its place.
