Upside-Down Raspberry Cheesecake

Ingredients
4 fresh Raspberries
1/2 oz Black raspberry liqueur
Lemon peel
2 oz Vanilla vodka
1/2 oz Vanilla liqueur
1/2 oz Sugar syrup 'rich' (2:1)
5 barspoon Mascarpone cheese
1 oz Whipping cream
How to make
Serve in a martini glass
Prepare
- 1 Select and pre-chill a MARTINI GLASS.
- 2 Prepare garnish of of Graham cracker or plain digestive biscuit.
Method
- 3 MUDDLE raspberries in base of shaker.
- 4 Add black raspberry liqueur, SHAKE with ice.
- 5 FINE STRAIN into centre of glass to form the base layer.
- 6 Clean shaker, or use a second shaker.
- 7 GRATE lemon zest into shaker.
- 8 Add other ingredients, SHAKE with ice.
- 9 Strain into glass over a spoon to LAYER over the raspberry base.
Garnish
- 10 Crumble graham cracker or plain digestive biscuit over cocktail.
