3/4 oz Old Tom gin
3/4 oz Manzanilla sherry
3/4 oz Pear liqueur
3/4 oz Lemon juice
1/4 oz Orgeat syrup

How to make

Serve in a coupe glass

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of skewered green olives.

  1. 3 SHAKE all ingredients with ice.
  2. 4 FINE STRAIN into chilled glass.

A dry sherry and pear sour with old tom gin and almond syrup. The garnish distracts from sweet and sourness.

This cocktail is an adaptation of one created by Tim McCarthy at Hawksmoor Guildhall, London. The Tom & Jerez is recognized as one of the restaurant chain's "The Sacred Six". It was encountered in 2025 at Hawksmoor Manchester, where it was presented with the description "Spain in a glass."
