Ingredients

1 oz Blanco tequila
1 oz Cold brew coffee
1/2 oz Amaro (e.g. Averna)
1/3 oz Sugar syrup 'rich' (2:1)
1/2 oz Egg white (pasteurised)
1 dash Mole bitters

How to make

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare coffee beans for garnish.

Method

  1. 3 SHAKE all ingredients with ice and strain back into shaker.
  2. 4 DRY SHAKE (without ice).
  3. 5 FINE STRAIN into chilled glass.

Garnish

  1. 6 Garnish with 3 coffee beans floated in a petal formation in the centre of the cocktail's foamy head.

History

This tequila-infused coffee cocktail is relatively low in alcohol and serves well as either an aperitif or a digestive. Having been a longtime trustee of the UK's drinks industry charity, formerly known as The Benevolent, the name of this cocktail initially attracted attention. The Benevolent was established in 1986 to offer support to individuals within the drinks industry facing hardship. In March 2020, its name was changed to the Drinks Trust to more accurately reflect its mission.
