History

Sour cherry notes with a bittersweet character and almond-like stone fruit nuances.

Ciarrai Kelly and Adam Montgomerie created this drink in 2025 at Hawksmoor in Manhattan, New York City. Their original recipe uses London dry gin and includes a barspoon of acid-adjusted cherry juice, which they prepare with 15 grams malic acid, 30 grams citric acid, and 700 grams cherry juice.
