Ingredients

1 1/2 oz Mezcal
1/3 oz Orange Curaçao
1/3 oz Chilli liqueur
1/3 oz Ginger liqueur
1/3 oz Pineapple juice
1 oz Lime juice
1/2 oz Egg white (pasteurised)

How to make

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare dust garnish made with an equal mix of powdered sugar, salt and cayenne pepper.

Method

  1. 3 SHAKE all ingredients with ice and strain back into shaker.
  2. 4 DRY SHAKE (without ice) to emulsify.
  3. 5 FINE STRAIN into chilled glass.

Garnish

  1. 6 Dust with pre-mixed sugar, salt and cayenne dust.

Melissa Yard created this drink in 2018 at Joséphine Wine Bar in Charleston, South Carolina, USA. Her original recipe included a homemade pineapple jalapeño syrup and did not call for chili liqueur.
