Prepare
- 1 Select and pre-chill a COLLINS GLASS.
- 2 Prepare garnish of coin-sized lemon zest..
Method
- 3 DRY SHAKE (without ice) to emulsify.
- 4 SHAKE again with ice.
- 5 FINE STRAIN into chilled glass. (No ice in the glass.)
- 6 TOP with soda to bring the cocktail level with the glass rim.
- 7 Leave stand for 45 seconds, then TOP with more soda to raise the foamy head above the rim.
Garnish
- 8 EXPRESS lemon zest twist over the cocktail and use as garnish.

Joseph Schwartz created this drink around 2001 at Milk & Honey in New York. The owner, Sasha Petraske, had brought in a bottle of Licor 43 and tasked Schwartz with inventing a new cocktail. This drink is also featured in Petraske's 2016 book, Regarding Cocktails.
