Ingredients

2 oz Aged rum (6-10yr)
2/3 oz Falernum liqueur
1/2 oz Lime juice
1/4 oz Lemon juice
1/2 oz Brown sugar syrup
1 dash Aromatic bitters

How to make

Serve in a collins glass

Prepare

  1. 1 Select and pre-chill a COLLINS GLASS.
  2. 2 Prepare garnish of orange slice wheel and mint sprigs.

Method

  1. 3 POUR ingredients into chilled glass.
  2. 4 Two-thirds fill glass with crushed ice and SWIZZLE.
  3. 5 Add more crushed ice to fill glass and SWIZZLE some more.

Garnish

  1. 6 Garnish with orange slice and mint sprigs bouquet.
  2. 7 Serve with a straw.

History

Dark rich sugar, dark rum, falernum's clove and cinnamon, and citrus juice. Served long with crushed ice.

This drink came about in the early 1800s in Guyana. British expatriates drank it on the terrace of the Georgetown Club.
