Ingredients

1 1/2 oz Light white rum
1 oz Lemon juice
1/2 oz Sugar syrup 'rich' (2:1)
1/2 oz Egg white (pasteurised)
1/2 oz OP high ester aged pot still rum

How to make

Serve in a old-fashioned glass

  1. 1 SHAKE first 4 ingredients with ice and strain back into shaker
  2. 2 DRY SHAKE (without ice) and fine strain into ice-filled glass
  3. 3 FLOAT pot still rum.

History

A light rum sour is finished with a float of pungent pot still rum.

Adapted from a recipe created in 1971 by Wilfred Sands while he was bartending at the Lyford Cay Club in New Providence, Bahamas. Wilfred Sands apparently made the drink at the request of a club member who desired a short rum cocktail that was not too sweet.
