Ingredients

2 oz Aged rum (6-10yr)
3/4 oz Lemon juice
1/2 oz Sugar syrup 'rich' (2:1)
1 dash Aromatic bitters
2 oz Soda water

Serve in a collins glass

Prepare

  1. 1 Select and pre-chill a COLLINS GLASS.
  2. 2 Prepare garnish of skewered lemon slice wheel and Luxardo Maraschino Cherry (sail).

Method

  1. 3 SHAKE first 4 ingredients with ice.
  2. 4 STRAIN into ice-filled glass.
  3. 5 TOP with soda.

History

Unlike rum and lime, the Rum Collins uses lemon, which combines brilliantly with aged rum in this refreshing long drink.

This RUM COLLINS recipe is adapted from the 1932 menu of Sloppy Joe's Bar in Havana, Cuba. It combines the juice of a lemon and one part rum with seltzer water, served in a 10-ounce glass with cracked ice.
