Serve in a flute glass

Prepare

  1. 1 Select and pre-chill a FLUTE GLASS.
  2. 2 Prepare garnish of heart-shaped strawberry slice.

Method

  1. 3 MUDDLE strawberries in base of shaker.
  2. 4 Add liqueur and lemon juice, SHAKE with ice.
  3. 5 FINE STRAIN into chilled glass.
  4. 6 TOP with sparkling wine and briefly stir.

Garnish

  1. 7 Garnish with strawberry slice on rim.

This cocktail is named for Gioachino Antonio Rossini, the 19th-century Italian opera composer. It is one of the most popular Bellini variants found in Venice.
