Ingredients

10 fresh Raspberries
2 oz Gin
1/2 oz Raspberry liqueur
1 1/2 oz Lemon juice
1/2 oz Sugar syrup 'rich' (2:1)
3 dash Orange bitters
3/4 oz Soda water

How to make

Serve in a collins glass

Prepare

  1. 1 Select and pre-chill a COLLINS GLASS.
  2. 2 Prepare garnish of skewered raspberry and lemon slice wheel.

Method

  1. 3 MUDDLE raspberries in base of shaker.
  2. 4 Add next 5 ingredients (all but soda) and SHAKE with ice.
  3. 5 FINE STRAIN into ice-filled glass.
  4. 6 TOP with soda and briefly stir.

Garnish

  1. 7 Garnish with skewered lemon slice wheel and raspberry (sail).

History

A popular modern adaptation of the classic Collins with 45ml (1½oz) lemon juice, yet far from overly sour. Reducing the lemon and rebalancing with less sugar results in a lesser cocktail.
