Ingredients

2 oz Pisco
1 oz Watermelon syrup
3/4 oz Lime juice
1/2 oz Egg white (pasteurised)

How to make

Serve in a nick & nora glass

Prepare

  1. 1 Select and pre-chill a NICK & NORA GLASS.
  2. 2 Prepare garnish of dehydrated jalapeño slice.

Method

  1. 3 SHAKE all ingredients with ice and strain back into shaker.
  2. 4 DRY SHAKE (without ice).
  3. 5 FINE STRAIN into chilled glass.

History

With a whole measure of watermelon syrup, this cocktail is on the sweet side, but beautifully balanced with delicate jalapeño heat – at least when using a controlled amount of jalapeño infused in the pisco.

This drink was created by David Osborne at Bellota tapas bar, San Francisco, USA. Incidentally, "purpurina" is Spanish for glitter or tinsel.
