4 fresh Raspberries
1 2/3 oz Bourbon whiskey
1/2 oz Bianco/blanco vermouth
1/6 oz Red bitter liqueur
3/4 oz Lemon juice
1/2 oz Sugar syrup 'rich' (2:1)
1/2 oz Egg white (pasteurised)

How to make

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of drops aromatic bitters.

Method

  1. 3 MUDLLE raspberries in base of shaker.
  2. 4 Add other ingredients, SHAKE with ice and strain back into shaker.
  3. 5 DRY SHAKE (without ice) to emulsify.
  4. 6 FINE STRAIN into chilled glass.

Garnish

  1. 7 Garnish with 2 drops of aromatic bitters on foam head.

History

Bourbon-laced, bittersweet fruity sourness fills this small cocktail with big flavour.

This recipe is adapted from one created in 2023 by Sam Penton at the Manor Bar in the Rosewood Miramar Beach Hotel, Montecito, California. Sam developed his cocktail for a menu themed around literary villains and named it "Napoleon" in reference to the Marxist pig from George Orwell's 1945 novel, Animal Farm.
