History
A Vieux Carré variation using rum instead of cognac.
Collin Westgate is credited with this cocktail's creation. He noted on the Vieux Carré page that he found the drink to be excellent with aged dark Jamaican rum when he ran out of cognac. Roberto Brazzo followed up, agreeing about the rum preference and referring to these drinks as a 'Près du Quai.' He explained this name choice: "since we moved away from the Vieux Carré 'old square' to a more nautical 'by the docks' or 'near the wharf'." This tasty and appropriately named cocktail is thanks to the suggestions of Collin and Roberto.
