Ingredients

1 oz Scotch whisky
2/3 oz Peated malt whisky
2/3 oz Lemon juice
1/2 oz Ginger liqueur
1/2 oz Honey and water syrup
1/6 oz Amaro (e.g. Montenegro)

How to make

Serve in a old-fashioned glass

Prepare

  1. 1 Select and pre-chill an OLD-FASHIONED GLASS.
  2. 2 Prepare garnish of skewered crystallised ginger and peated whisky from atomiser.

Method

  1. 3 SHAKE all ingredients with ice.
  2. 4 STRAIN into ice-filled glass (preferably over a large cube or chunk of block ice).

Garnish

  1. 5 MIST with 3 sprays of peated whisky and garnish with skewered crystallised ginger.

History

Sam Ross' original Penicillin with smoky peated whisky, ginger, citrus, and amaro.

This cocktail is a variation on the Penicillin. It gets its name from 'Phenoxymethylpenicillin', an antibiotic, and 'phenols', which are flavor compounds found in whisky.
