Prepare
- 1 Select and pre-chill a COUPE GLASS.
- 2 Prepare garnish of oregano sprig.
Method
- 3 Gently MUDDLE (just to bruise) oregano sprigs (stalks and leaves) in base of shaker.
- 4 Add other ingredients and SHAKE with ice.
- 5 FINE STRAIN into chilled glass.
Garnish
- 6 Garnish with oregano sprig.

History
A herbal variation on Audrey Saunders' French Pearl, using mezcal instead of gin.
Jim Meehan created this recipe in the winter of 2008. It appears in his 2011 book, The PDT Cocktail Book, where he states, "With the help of barman Euclides López, I fashioned a Mexican rendition of Audrey Saunders' French Pearl using two staples of Puebla Cuisine: mezcal and fresh oregano."
