Ingredients

1 1/2 oz Light gold rum 1-3yo
3/4 oz Lemon juice
1/2 oz Sugar syrup 'rich' (2:1)
1/24 oz Absinthe
1 dash Orange bitters
3 drop Saline solution 4:1
1/4 oz Chilled water

How to make

Serve in a coupe glass

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of grated nutmeg.

Method

  1. 3 SHAKE all ingredients with ice.
  2. 4 STRAIN into chilled glass.

Garnish

  1. 5 Dust with freshly grated nutmeg.

A subtle absinthe infusion makes this a delicate and cleansing Daiquiri.

This Pauline Cocktail is derived from Harry Craddock's 1930 publication, The Savoy Cocktail Book. PAULINE COCKTAIL. (Serves 6) 3 Glasses Rum. 3 Glasses Sweetened Lemon Juice. 1 Dash Absinthe Bitters. A little Nutmeg, grated. Shake well and strain into cocktail glass. This recipe appears as written in the 1930 book.
