Ingredients

2 oz Calvados apple brandy
1/2 oz Lime juice
1/6 oz Grenadine syrup
1/6 oz Sugar syrup 'rich' (2:1)
2 dash Absinthe
1/3 oz Chilled water

How to make

Serve in a coupe glass

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of lime slice wheel.

  1. 3 SHAKE all ingredients with ice.
  2. 4 FINE STRAIN into chilled glass.

Garnish

  1. 5 Garnish with lime slice on rim.

History

Essentially, a Jack Rose with a couple of dashes of absinthe. (If using bonded-strength applejack for calvados, reduce to 50ml.)

This vintage cocktail first appeared in Charles H. Baker's 1939 book, The Gentleman's Companion. In it, Baker mentions that the cocktail comes "from the notebook of one of our pilot friends–when off duty–may seek one." This friend was evidently a pilot for Pan Am Airlines. The Pan American Clipper's current popularity is partly attributed to its promotion by St. John Frizell at his Fort Defiance bar in Brooklyn, New York City, USA.
