- 1 Select and pre-chill a COLLINS GLASS.
- 2 Optionally, RIM glass with salt (moisten outside edge with lime or orange juice and dip into salt).
- 3 Prepare garnish of pink (or red) grapefruit wedge.

Paloma means 'dove' in Spanish. This well-known cocktail in Mexico is rumoured to have been created by Don Javier Delgado Corona, owner and bartender of La Capilla (The Chapel) in Tequila, Mexico. Don Javier notably stirred his drinks with a large knife.
