History
This is one of those straightforward cocktails with three ingredients that allows for many variations. The initial recipe called for Dubonnet, French (dry) vermouth, and sherry, but regrettably, the type of sherry was not specified. The inclusion of dry vermouth initially prompted a balance with a 'sweet' cream sherry, followed by experiments with combinations ranging from fino sherry and bianco vermouth to different sherries paired with both dry and bianco vermouths. While equal parts Dubonnet, amontillado sherry, and bianco vermouth prove effective, the combination of cream sherry and dry vermouth has been revisited. This cocktail is suitable for any time, from aperitif to a late-night refresher, with the garnish adapting to the occasion – an orange zest twist for an aperitif, or a maraschino cherry for late-night enjoyment.
