Ingredients

1 oz Mezcal
1 oz Blanco tequila
3/4 oz Lime juice
3/4 oz Honey and water syrup
3 dash Aromatic bitters
1 swath Grapefruit peel/zest

How to make

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of lime wedge.

  1. 3 REGAL SHAKE all ingredients (including grapefruit zest) with ice.
  2. 4 FINE STRAIN into chilled glass.

  1. 5 Garnish with lime wedge on rim.

History

The Regal Shake adds tartness and bitterness, countering the honey with lime juice for a sour mezcal and tequila sour.

This cocktail is adapted from a recipe created around 2012-14 by Ben Long, who was the head bartender at the John Dory Oyster Bar in Manhattan, New York City. The drink, named after Oaxaca, the Mexican state most associated with mezcal production, was featured in Georgette Morger-Petraske's 2016 book.
