Ingredients

1 oz Italian Brandy
2/3 oz Aged grappa
1/3 oz Oloroso sherry
1/2 oz Honey and water syrup
1/2 oz Lemon juice
1/12 oz Olive oil
1/2 oz Egg white (pasteurised)

How to make

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of grated nutmeg.

Method

  1. 3 SHAKE all ingredients with ice and strain back into shaker.
  2. 4 DRY SHAKE (without ice) to emulsify.
  3. 5 FINE STRAIN into chilled glass.

Garnish

  1. 6 Dust with freshly grated nutmeg.

Using unaged grappa amplifies the olive oil influence in this unique, must-try cocktail.

This is an adaptation of Lorenzo Antinori's Olive Oil Sour. Simon Sedgley, a fellow Discerning Drinker, shared comments that inspired this version. The name refers to grappa and brandy, which predominantly come from northern Italy, while olive oil is mostly made in southern Italy.
