Ingredients

1 1/2 oz Gin
1/4 oz Absinthe
3/4 oz Lemon juice
1/2 oz Sugar syrup 'rich' (2:1)
2 drop Saline solution 4:1
2 oz Brut sparkling wine

How to make

Serve in a flute glass

Prepare

  1. 1 Select and pre-chill a FLUTE GLASS.
  2. 2 No garnish to prepare.

Method

  1. 3 SHAKE first 5 ingredients with ice.
  2. 4 FINE STRAIN into chilled glass.
  3. 5 TOP with sparkling wine.

Garnish

  1. 6 Serve naked, without garnish.

History

A French 75 made more interesting by absinthe.

This cocktail was created in 2008 by Brian Miller at Death & Company in Manhattan, New York City. It is named after the 1959 thriller produced and directed by Alfred Hitchcock. The film stars Cary Grant, Eva Marie Saint, and James Mason. In the movie, Cary Grant's character Roger Thornhill says, "Now you listen to me, I'm an advertising man, not a red herring. I've got a job, a secretary, a mother, two ex-wives and several bartenders that depend upon me, and I don't intend to disappoint them all by getting myself 'slightly' killed."
