Ingredients

3/4 oz Blanco tequila
3/4 oz Dry vermouth
1/2 oz Red bitter liqueur
3/4 oz Lime juice
1/2 oz Sugar syrup 'rich' (2:1)
2 1/4 oz Soda water

How to make

Serve in a collins glass

  1. 1 Select and pre-chill a COLLINS GLASS.
  2. 2 Prepare garnish of mint sprigs bouquet and lime wedge.

  1. 3 SHAKE first 5 ingredients with ice.
  2. 4 Open shaker and ADD soda water.
  3. 5 STRAIN into ice-filled glass.

History

This bittersweet Cooler is low-alcohol and tequila-laced, suited to summer drinking. All the better when enjoyed on the beach.

Priscilla Leong, a bartender from Melbourne, created this cocktail in 2018. She won that year's Australian Speed Rack competition with her entry. The North Beach Cooler is among over 100 Speed Rack recipes included in the 2024 book, A Quick Drink - The Speed Rack Guide to Winning Cocktails for Any Mood.
