- 4 DRY SHAKE (without ice).
- 5 FINE STRAIN into chilled glass.

History
Cognac and orange curaçao are smoothed with egg white and sharpened with orange bitters. Sugar syrup may be reduced or omitted depending on the sweetness of the curaçao.
This cocktail was created in the early 1900s and served as the signature drink at the New Netherland Hotel. Located on Fifth Avenue (at 59th Street) in New York City, the hotel was, for a time, the tallest in the world.
