Ingredients

10 fresh Mint leaves
3/4 oz Lime juice
1/3 oz Sugar syrup 'rich' (2:1)
2 dash Saline solution 4:1
2 oz Light white rum
1 2/3 oz Soda water

How to make

Serve in a collins glass

Prepare

  1. 1 Select and pre-chill a COLLINS GLASS.
  2. 2 Prepare garnish of dash of aromatic bitters, mint sprig bouquet and wooden lollypop stick stirrer..

Method

  1. 3 Gently MUDDLE mint in base of chilled glass (just to bruise).
  2. 4 ADD next 4 ingredients (all but soda) and briefly stir to combine and lift mint with spoon.
  3. 5 FILL glass with cubed ice (not crushed or pebble ice, which are too fine). If using large cubes, crack some with an ice-tapper or the back of an aluminium ice scoop.
  4. 6 TOP with soda water and briefly stir.

Garnish

  1. 7 Garnish a dash of aromatic bitters, mint sprigs bouquet and wooden lollypop stick stirrer.

Flavour profile

History

This recipe is consistent with Mojitos served at Cuba's famous La Bodeguita del Medio, although caster sugar is used rather than syrup. It also resembles Caipirinhas made in Brazil.

This drink is an adaptation of a recipe developed by Julio Cabrera, who is the maestro cantinero and founder of Café La Trova in Miami, Florida.
