Ingredients

15 fresh Mint leaves
1 oz Light gold rum 1-3yo
1/2 oz Peach schnapps
1/3 oz Honey and water syrup
1/2 oz Pineapple juice
1/2 oz Lime juice

How to make

Serve in a collins glass

Prepare

  1. 1 Select and pre-chill a COLLINS GLASS.
  2. 2 Prepare garnish of lime slice wheel and mint sprigs.

Method

  1. 3 Gently MUDDLE mint (just to bruise) with rum in base of shaker.
  2. 4 Add other ingredients and SHAKE with ice.
  3. 5 FINE STRAIN into glass filled with crushed ice.

Garnish

  1. 6 Garnish with mint sprigs bouquet.
  2. 7 Serve with a straw.

History

Recipes for this well-established Tiki classic exhibit considerable variation and are frequently confused with the Aku Aku, into which this cocktail evolved under its creator, Donn Beach. The original recipe specifies peach brandy (produced from fermented peaches) instead of peach liqueur (which is based on neutral spirits). However, due to its clarity and clean flavor profile, peach schnapps is preferred as a substitute. Many recipes involve blending fresh mint and pineapple. While blending the mint results in a vibrant green hue, the appearance can resemble stagnant pond water, suggesting a drink consumed for perceived health benefits rather than enjoyment. Therefore, this version is shaken, employing ample mint to impart both color and flavor.

This recipe is adapted from a creation by Donn Beach, dating to the late 1930s at his Don The Beachcomber restaurant in Hollywood, California.
