1 oz Absinthe
2/3 oz Orgeat syrup
4 oz Chilled water

How to make

Serve in a collins glass

  1. 1 POUR absinthe and almond syrup into glass
  2. 2 Ideally, serve iced water separately in a small jug (known in France as a 'broc') so the customer can dilute to their own taste
  3. 3 Lastly, add ice to fill the glass.

History

A long, refreshing drink with aniseed, liquorice and almond notes.

Pronounced 'Mor-Esk', this classic drink is highly favored in the South of France, where pastis is now frequently substituted for absinthe. It was initially conceived by French soldiers during the Algerian campaign in the 1830s and 40s, and was also referred to as Bureau Arabe, named after the military division responsible for local affairs, which was known for its firm yet refined approach.
