History
This cocktail uses Martinique agricole rum, which seems more appropriate given the name, instead of the original Jamaican rum. Proportions were determined through experimentation.
This cocktail is the Hotel Martinique's signature drink from the 1930s. While it was a house secret, the ingredients were Jamaica Rum, Absinthe, Grenadine, Orange Juice, and a little Lemon Juice. In 2023, Max Green, bar director at The Press Club Grill in the Hotel Martinique, reimagined the signature cocktail using the vintage menu and the following recipe, as shared by The Mix with Robert Simonson. • 1 ounce Banks 5 Island Rum • ½ ounce Appleton Reserve rum • ¼ ounce Rhum JM Blanc • ½ ounce Grand Marnier • ¾ ounce Lemon • ½ ounce Grenadine First, rinse a coupe glass with absinthe. Then, combine the other ingredients in a cocktail shaker filled halfway with ice. Shake vigorously until chilled, approximately 5-7 seconds. Double strain into the prepared glass and garnish with a lime wedge.
