Serve in a coupe glass
Prepare
- 1 Select and pre-chill a COUPE GLASS.
- 2 Prepare garnish of cucumber slice.
Method
- 3 RINSE chilled glass with absinthe (swirl around to coat and discard excess) and set to one side.
- 4 MUDDLE cucumber and gently muddle mint (just to bruise) in base of shaker.
- 5 Add rum, lime juice and sugar, and SHAKE with ice.
- 6 FINE STRAIN into absinthe-rinsed glass.
- 7 TOP with splash of soda.
Garnish
- 8 Garnish with cucumber slice floated on surface.

History
A Daiquiri freshened with mint and cucumber, lengthened with soda.
This cocktail, created by Tom Walker at The American Bar, Savoy Hotel, London, England, won the British Bacardà Legacy 2014. Tom Walker subsequently won the 2014 Bacardà Legacy Global Final with this drink. While the Daiquiri and Mojito have their roots in the 19th and 20th centuries, and the 'Maid' category emerged from an American style of drink creation, the 21st century needed its own contribution.
