Ingredients

1 1/2 oz Celery gin
1/4 oz Raspberry liqueur
1/2 oz Lime juice
1/4 oz Sugar syrup 'rich' (2:1)
1/12 oz Pickle juice

How to make

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of fresh raspberry.

Method

  1. 3 SHAKE all ingredients with ice.
  2. 4 STRAIN into chilled glass.

  1. 5 Garnish with raspberry.

History

A splash of raspberry liqueur gives a delicate pink hue; salty gherkin and celery gin flavours combine brilliantly in this feistier-than-it-looks cocktail.

This cocktail originated in 2016, an adaptation by Keli Rivers at Whitechapel Bar in San Francisco, USA. Keli Rivers first presented this highly palatable drink at the Tales of the Cocktail seminar on gin and genever in July 2016, affording an opportunity to sample it. The original preparation specified Rutte Celery Gin, and the distinctive taste of this gin is a significant element in the final beverage.
