Ingredients

2 oz Aged rum (6-10yr)
1/2 oz Kummel liqueur
1/4 oz Pimento dram
1 oz Orange juice
1/2 oz Lemon juice

How to make

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of Luxardo Maraschino Cherry.

  1. 3 SHAKE all ingredients with ice.
  2. 4 FINE STRAIN into chilled glass.

  1. 5 Garnish with maraschino cherry.

History

This aged rum sour highlights caraway (kummel) and pimento spice (allspice dram).

The Kingston is a classic cocktail featured in the 1930 publication The Savoy Cocktail Book. The recipe presented here is by Frank Caiafa, author of the 2016 book The Waldorf Astoria Bar Book. Caiafa suggests, "I've added the touch of lemon juice for a bit of zip, but you could use a couple of dashes of Acid Phosphate or try it without, as they did at The Old Bar [at The Waldorf Astoria]." Frank prefers Appleton Reserve for his rum and Combier Kummel.
