Ingredients

2 oz Blanco tequila
3/4 oz Lime juice
1/2 oz Orgeat syrup
1/3 oz Egg white (pasteurised)
6 drop Orange flower water
3 drop Saline solution 4:1

How to make

Serve in a old-fashioned glass

Prepare

  1. 1 Select and pre-chill an OLD-FASHIONED GLASS.
  2. 2 Prepare garnish of cinnamon powder.

Method

  1. 3 SHAKE all ingredients with ice and strain back into shaker.
  2. 4 DRY SHAKE (without ice) to emulsify.
  3. 5 FINE STRAIN into ice-filled glass.

Garnish

  1. 6 Dust with cinnamon powder.

History

A Margarita riff using orgeat for almond notes instead of orange liqueur. Floral orange water suits better than rose.

This cocktail is named for Mexican actor and singer Pedro Infante Cruz (1917-1957), a prolific artist with over 60 films and more than 350 recorded songs to his name. The recipe is adapted from one created in 2009 by Giuseppe González at Dutch Kills bar in New York City's Long Island City. In January 2025, after enjoying an Infante at Pictura in the Mandarin Oriental Ritz, Madrid, Spain, a splash of egg white was added, and the garnish was changed from nutmeg to cinnamon.
