Ingredients

3/4 oz Fernet liqueur
3/4 oz Chartreuse Green
3/4 oz Lime juice
1/2 oz Sugar syrup 'rich' (2:1)
1/2 oz Egg white (pasteurised)
3 drop Saline solution 4:1

How to make

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare lime slice wheel (ideally dehydrated) for garnish.

Method

  1. 3 SHAKE all ingredients with ice.
  2. 4 STRAIN back into shaker.
  3. 5 DRY SHAKE (without ice) to emulsify.
  4. 6 FINE STRAIN into chilled glass.

Garnish

  1. 7 Garnish with (dehydrated) lime wheel floated on surface.

Herbal, bittersweet, and sour. As a 'Sour', adding saline and egg white is fitting.

This drink is adapted from a recipe created in 2011 by Ted Kilgore at Taste by Niche in St. Louis, USA. It was originally made for a bartender who was visiting the establishment. Ted Kilgore's original recipe used equal parts Fernet-Branca, Green Chartreuse, lime juice, and simple syrup.
