Ingredients

1 oz Gin
1/2 oz Lime juice
1/2 oz Apricot liqueur
1/3 oz Apricot eau-de-vie
1/4 oz Sugar syrup 'rich' (2:1)
3 dash Creole bitters
1 oz Brut sparkling wine

How to make

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of lime slice or wedge (or apricot).

Method

  1. 3 SHAKE first 6 ingredients with ice.
  2. 4 FINE STRAIN into chilled glass.
  3. 5 TOP with sparkling wine.

Garnish

  1. 6 Garnish with lime (or apricot) slice/wedge on rim.

This cocktail is an adaptation of Toby Cecchini's Improved Pendennis Club Cocktail, created in 2022. The adaptation was made by Phil Ward, a fellow bartender at the Long Island Bar in Brooklyn, New York City.
