Ingredients

1 1/2 oz Gin
1/2 oz Lime juice
1/3 oz Orgeat syrup
6 drop Tonka bitters
3 drop Saline solution 4:1
3/4 oz Brut sparkling wine

How to make

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of lime zest twist.

Method

  1. 3 SHAKE first 5 ingredients with ice.
  2. 4 FINE STRAIN into chilled glass.
  3. 5 TOP with sparkling wine.

Garnish

  1. 6 Express lime zest twist over the cocktail and use as garnish.

History

An Army & Navy variation with brut sparkling wine. The dryness benefits from slightly more orgeat than expected; achieve balance for delicious layered flavour.

Gustav Selmer Fougner apparently wrote about this vintage cocktail in his Along the Wine Trail column for the New York Sun newspaper, which he penned from 1933 to 1941. No earlier reference or original recipe has been found, so the above is an interpretation. This cocktail, referenced to Fougner, was discovered on the menu of London's Luggage Room bar in September 2025.
