- 3 MUDDLE pineapple in base of shaker.
- 4 Add other ingredients and SHAKE with ice.
- 5 FINE STRAIN into chilled glass.

- 6 Garnish with pineapple wedge on rim.

Don't be misled by the pineapple; this spirit-forward cocktail is dry with tropical fruit garnish.
This recipe is adapted from Harry Craddock's 1930 book, The Savoy Cocktail Book. HOLLAND HOUSE COCKTAIL. The Juice of ¼ Lemon. 1 Slice Pineapple. 1/3 French Vermouth. 2/3 Dry Gin. 4 Dashes Maraschino. Shake well and strain into cocktail glass. Before he led The American Bar at The Savoy Hotel in London, Craddock worked at New York's Holland House Hotel, where this was their signature cocktail. Craddock's recipe for the Holland House differs significantly from the one by George J. Kappeler, who was at The Holland House 35 years prior and authored his own cocktail book.
