History
Apple brandy forms the backbone to this tropical fruity delight, made special by a hint of herbal complexity. The recipe uses a 2:1 pineapple syrup; use 15ml (½oz) of 1:1 syrup for similar balance. Commercially available pineapple syrup yields a good cocktail, but homemade pineapple gum syrup offers more rounded fruitiness.
This cocktail originated in 2014 at Trou Normand, a bar in San Francisco, California, USA. Thad Vogler, the creator of the drink, originally specified a homemade pineapple gum syrup. His recipe differs from the current one by omitting the combination of pineapple juice and syrup.
