Ingredients

6 fresh Basil leaves
1 2/3 oz Old Tom gin
1 oz Lemon juice
1/2 oz Sugar syrup 'rich' (2:1)
3 dash Celery bitters
1/2 oz Egg white (pasteurised)

How to make

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of basil leaf.
  3. 3 Garnish with a basil leaf.

Method

  1. 4 MUDDLE basil in base of shaker.
  2. 5 Add other ingredients, SHAKE with ice and strain back into shaker.
  3. 6 DRY SHAKE (without ice) to emulsify.
  4. 7 FINE STRAIN into chilled glass.

Lime green and frothy, this cocktail is lemon fresh and botanical with gin, basil and a hint of celery.
