1 1/4 oz Aged rum (6-10yr)
1 oz Pineapple juice
1 oz Tawny port
1/6 oz Sugar syrup 'rich' (2:1)
1 fresh Egg (white and yolk)

How to make

Serve in a coupe glass

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of grated orange zest.

Method

  1. 3 SHAKE all ingredients with ice.
  2. 4 FINE STRAIN into chilled glass.

  1. 5 Dust with grated orange zest.
