History
This clean, refreshing cocktail is known to all, but the authentic version is rarely experienced. A Gin Fizz differs from a Gin Collins (properly John Collins) by serving in a small (10oz max) highball glass, while Collins use larger 12oz Collins glasses. Importantly, a fizz is served without ice.
A classic from the mid-19th century, this drink is featured in Jerry "The Professor" Thomas' 1876 Jerry Thomas' Bar-tenders Guide. The Whiskey Fiz (244) is prepared using 4 or 5 dashes of gum syrup, the juice of half a lemon, and one small wineglass of whiskey. The glass is filled with shaved ice, shaken well, and then strained into a glass. Seltzer water from a syphon is added to fill the glass, and it is recommended to drink it without hesitation. The Brandy Fiz (245) is made identically, substituting brandy for whiskey. Similarly, the Gin Fiz (246) follows the same method, using gin instead of whiskey.
