History
Rhum Agricole is a tasty addition, but the base rum choice makes this Club special. Cuban Bacardi gold is suggested over carta blanca; a light rum with delicate hint of age is best, with Havana Club 3 year old marrying well with vermouth.
This recipe is adapted from Charles H. Baker Jr.'s 1951 book, The South American Gentleman's Companion. It draws heavily from the Georgetown Club cocktail served by Frederic Yarm at Loyal Nine in Cambridge, Massachusetts, during late Spring or early Summer of 2016. THE GEORGETOWN CLUB COCKTAIL is described as a SIMPLE YET DEFINITELY INTERESTING MIX, hailing from the CAPITAL CITY of BRITISH GUIANA. To prepare, use a bar glass, not a shaker. Combine 2 oz of the finest white rum available, such as Cuban Bacardi, ¾ pony of Noilly Prat Dry French Vermouth, and 1 tsp of Falernum. Stir gently with plenty of ice and strain into a chilled stemmed cocktail glass. Finish by twisting a curl of orange peel over the drink for aroma; lemon peel can also be used. The subtle combination of delicate rum with Falernum flavoring and the bitter notes of dry vermouth is highlighted. No bitters are recommended for this particular preparation.
